The quantity of polyphenols is what makes the highest and best evoo. Oils under 200/ml of polyphenols are low grade oils and levels of 300 to 500/ml have significant health benefits.
Time since cold pressed is a huge factor because evoo ages and after 6 mos. The quality degrades significantly.
